Chef Youji has spent years working across a broad spectrum of Japanese cuisine — sushi (寿司), sashimi (刺身), tofu (豆腐), tsukemono (漬物), otsumami (おつまみ), robata (炉端焼き), ramen (ラーメン), cha-kaiseki (茶懐石), edo-kaiseki (会席), washoku (和食), and yoshoku (洋食). Each discipline was pursued with authenticity and respect for its technique, history, and ingredients.
Rooted in ancestral lineage — from captains of fishermen on his father’s side to farm owners on his mother’s side — his work reflects a lifelong awareness of nature’s rhythm. Washoku Renaissance was founded in 2018 as a way to express that philosophy intentionally: honoring seasonality, ecosystem, and balance in every dish.
This is not simply a restaurant, but an ongoing exploration of Japanese cuisine — from daily nourishment to ceremonial depth.
