Shyun 旬 Washoku by Washoku Renaissance will be starting in August 2022!
Shyun Washoku (dba) is the food service department of Washoku Renaissance (I currently use Washoku Renaissance as dba, however), which was the concept behind "Kamakura" and is a forum for people who are Japanese food and culture connoisseurs. Shyun Washoku focuses on healthy and sustainable ocean product source from local and domestic (first) as well as any clean, sustainable environment globally. (However, it's limited due to concern of CO2 emission, and to help reduce) Food is washoku = authentic Japanese cuisine including sushi, based on traditional Japanese culture with playful spin, accessible approach and limited accommodation for food allergies and restrictions on each item. (90% pescatarian and no vegan - there will be pesco or lacto/ovo vegetarian dishes available later on.)
Omakase and WR Curbside (-pickup) are reservation only, but it can be more flexible when online technology gets better. .Shyun Washoku is not for people who are looking for SUSHI (sue-shh), or who are looking for traditional food in Kyoto, but for people who are considering of health, environment, sustainability (environment and also restaurant industry with all food chains) and upcoming future happenings to share in advance.
